Komagata-zuke - These local pickles are made using specially plucked vegetables that are soaked in sake lees, resulting in a low-salt, pleasantly crisp product. News of the pickles has spread by word of mouth, and there are those from outside Toyama who say they are even more tasty than the noted original Nara-zuke pickles.
