Sanodaikon-kojizuke: The Sano district has prospered from the raising of vegetables since ancient times. The daikon, or white radishes, grown here are particularly soft and juicy; because of this, they have earned the name "Kizu daikon," indicative of the great esteem with which they are held. These daikon produce a refreshingly flavored kojizuke-style relish when pickled with a light amount of salt.
